RAD Custom Winery is a high quality custom crush facility dedicated to the production of premium and super-premium English wines. Established to highlight your identity and choices, and give you access to the best equipment from around the world – with support from our expert winemaker, and their team.
We’re situated in a prime location with easy access to London and London City Airport. This places us at the gateway to one of the largest wine markets in Europe, and the best fruit the UK produces for still wines.

The Rad Custom Winery Team
Sam began his career managing the wine department at Waitrose, where he developed a strong interest in winemaking. This led him to pursue a Wine Business degree at Plumpton College, graduating top of his class with first class honours.
While studying, Sam worked at Hidden Spring as Sales Manager, gaining experience in the cellar during harvest and bottling. This hands-on work sparked a deeper interest in wine production and motivated him to broaden his expertise through further study. He completed a Master’s in Viticulture and Enology at Università Cattolica del Sacro Cuore in Milan, again finishing top of his class.
Sam has since worked at some of the leading wineries in England – including Danbury Ridge – working under acclaimed winemaker Liam Idzikowski. He then became Head Winemaker at boutique producer Tickerage Wine, where he oversaw viticulture, enology, and commercial operations. Sam also spent time at Defined Wine, where he gained experience in contract winemaking.
In 2024, Sam joined RAD Custom Winery as Winemaker and Winery Manager. He was involved in the planning and development of the facility and now leads winemaking operations, starting with the 2024 harvest. Sam focuses on crafting high-quality wines, particularly Chardonnay and Pinot Noir, using exceptional English fruit.
Gary entered the wine industry later in his career, bringing with him extensive commercial expertise as a qualified accountant. With years of experience in setting up, financing, and managing businesses, Gary combines a business acumen with a passion for wine.
What began as a personal interest led Gary to pursue WSET courses and a short program at Plumpton College, culminating in the completion of the WSET Diploma in Wine in May 2024. This deepened his enthusiasm for wine and, in particular, the potential of high-quality English wines.
In 2024, Gary co-founded RAD Custom Winery. The team at RAD Custom Winery is driven by a commitment to supporting winemakers with access to world-class equipment and expertise. As Commercial Director, Gary plays a pivotal role in the business’s operations, ensuring RAD Custom Winery remains a trusted partner for winemakers looking to create exceptional English wines.
Gary is passionate about fostering innovation in English winemaking and in providing an environment that prioritises quality, collaboration, and opportunity.
